Chicken Cucumber Cups

A refreshing and healthy snack you can prepare in less than 30 minutes! This low-calorie & high protein meal is very easy to prepare and the ingredients are simple. You can experiment with the ingredients to add more flavor to your cups!

Making this cute little cucumber cups for this recipe is very easy, start by cutting the cucumber into 1 inch thick slices. Use a melon baller to hollow out the center that will be used as a space for the filling.

For the filling, it’s common to use canned-chicken meat but it’s a healthier option to go for a fresh chicken meat. Simmer the chicken breast for 12 minutes and shred the meat into little pieces using two forks.

To add color and vegetable taste, cut little square pieces of red bell pepper.

Make the Chicken Salad mixture by combining the shredded meat, Bell Pepper, and Low-fat Mayo. Then, fill out those cute little cucumber cups and you’re done!

Ingredients

  • 1 Chicken Breast (6.3 ounces / 180 grams)
  • 1 Medium Cucumber
  • Sliced Red Bell Peppers (1.8 ounces / 50 grams)
  • Low-Fat Mayo (4.5 ounces/130 grams)
  • Black Pepper

Directions

  1. Simmer the Chicken Breast for 12 minutes
  2. Use two forks to make thin shredded chicken then put in a large mixing bowl and set aside.
  3. Make cucumber cups. Slice into 1 inch thick. Using a melon baller or small spoon, scoop the seeds out of the cucumber slices leaving about ¼ inch at the bottom.
  4. Chop the scooped seeds and put it into a bowl together with the shredded chicken.
  5. Add Red Bell Peppers, Low-fat Mayo and Black Pepper to taste. Stir the mixture well.
  6. Fill each cucumber cup with the tuna mixture. Sprinkle with black pepper.
  7. Serve and Enjoy!
