Protein Breakfast

This Avocado Toast is a high protein breakfast topped with poached egg and yummy cheese tomato salad. It’s so easy and can be made in under 15 minutes using very simple ingredients. This is a perfect Protein Breakfast before your workout.

Healthy breakfast doesn’t need to be complicated. This recipe needs few ingredients. You need one-half Avocado, Baby Tomatoes (also called Cherry Tomatoes), 1 Whole Grain Bread (Toasted), 1 medium Fresh Egg, Mozzarella Cheese, Basil, Olive Oil, Salt, and Pepper.

Prepare your Cheese Tomato Salad by tossing the ingredients (Baby Tomatoes, Basil, Feta Cheese, Olive Oil, Salt, and Pepper)  in a medium bowl. It is no secret that fresh ingredients make the best recipes. You will enjoy the tasty flavors of the ingredients if they are freshly picked from your garden or in the market.

Assemble your yummy protein breakfast by spreading a generous amount of Avocado to your toasted bread. Then add the Tomato Salad and the poached egg. Start your day healthy and happy!

Ingredients

  • Half Avocado
  • 1 Whole Grain Bread (Toasted)
  • 1 Medium Fresh Egg
  • Mozzarella (1.8 ounces / 50 grams)
  • Cherry Tomatoes (3.5 ounces 100 grams)
  • 2 Tablespoon Basil
  • Olive Oil
  • Black Pepper
  • Sea Salt

Directions

  1. In a Medium bowl, make a Cheese-Tomato Salad by combining Mozzarella, Basil and Baby Tomatoes. Then add a splash of Olive Oil then add Sea Salt and Black Pepper to taste.
  2. Mash the avocado using a fork and spread it on the slice of whole grain bread.
  3. Poach the egg in the pan of boiling water for 2-3 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on kitchen paper or towel.
  4. Add the poached egg to the Avocado Sandwich and top it with the Cheese-Tomato salad
