Yummy Stuffed Sweet Potato

Ingredients

  • 1 large-sized Sweet Potato
  • 1 Teaspoon Garlic Powder
  • Salt & Pepper
  • ¼ Cup Cottage Cheese (50 grams/1.7 ounces)
  • 1 Tablespoon Fried Red Peppers
  • 1 Teaspoon Spring Onions

Directions

  1. Preheat oven to 400°F or 200 ℃
  2. Prick each side few times using a fork then bake it for 1 hour.
  3. Slice the potato in half lengthwise. Then, scoop out the flesh leaving just enough edge. Set aside the flesh into a medium-size bowl.
  4. Put back the skin to the oven and bake it for another 5 minutes with the same temperature.
  5. Mash the Sweet Potato flesh together with Garlic granules/powder, Salt & Pepper, and mix it well.
  6. Fill each Sweet Potato Skin with the mixture. Add Cottage cheese.
  7. Add fried Red Peppers, Spring Onion as toppings and enjoy!
