Ingredients
- 1 large-sized Sweet Potato
- 1 Teaspoon Garlic Powder
- Salt & Pepper
- ¼ Cup Cottage Cheese (50 grams/1.7 ounces)
- 1 Tablespoon Fried Red Peppers
- 1 Teaspoon Spring Onions
Directions
- Preheat oven to 400°F or 200 ℃
- Prick each side few times using a fork then bake it for 1 hour.
- Slice the potato in half lengthwise. Then, scoop out the flesh leaving just enough edge. Set aside the flesh into a medium-size bowl.
- Put back the skin to the oven and bake it for another 5 minutes with the same temperature.
- Mash the Sweet Potato flesh together with Garlic granules/powder, Salt & Pepper, and mix it well.
- Fill each Sweet Potato Skin with the mixture. Add Cottage cheese.
- Add fried Red Peppers, Spring Onion as toppings and enjoy!
