Protein Stuffed Tomato Melts

This super quick and easy Protein Stuffed Tomato Melts is loaded with protein but low in carbs. A very refreshing, healthy and clever way to enjoy your Tuna Cheese Melt recipe.

A very important step in making this Protein Stuffed Tomato Melts recipe is turning the tomato halves upside down on a paper towel to remove excess water.

Ingredients

  • 3 Roma Tomatoes
  • Tuna (2.5 ounces / 70 grams)
  • Cottage Cheese (5.2 ounces / 150 grams)
  • Red Onion (1 ounce / 30 grams)
  • Celery (1 ounce / 30 grams)
  • ¼ Teaspoon Dried Dill
  • Black Pepper

Directions

  1. Preheat your grill to high heat or your oven at 400℉ or 200℃.
  2. Slice the Roma Tomatoes into halves and scoop out the seeds, flesh, and juices.
  3. Drain the Tomato halves by turning them upside down on a plate lined with paper towel.
  4. In a medium-size mixing bowl, combine Tuna,  Cottage Cheese, Red Onion, Celery, Dried Dill then season with Black Pepper. Mix well.
  5. Stuff the Tomato halves with the mixture and top each with a slice of Mozzarella Cheese.
  6. Cook on the grill for 4 to 5 minutes or if you are using an oven, bake it for 8 to 10 minutes or until filling is very hot and cheese has melted. If you are using an oven,
