Healthy Avocado Chips with Dip

Ingredients

AVOCADO CHIPS

  • 2 Avocados (Peeled and Sliced)
  • ½ Lime Juice
  • ½ Teaspoon of Black Pepper
  • ½ Teaspoon of Salt
  • 1 Egg (Lightly Beaten)
  • 1 Cup of Bread crumbs (6 ounces / 170 grams)

DIP

  • ½ Cup of Mayo (4 ounces / 113 grams)
  • ⅓ Cup Greek Yogurt (2.7 / 76 grams)
  • 1 Red Fresno Chili Peppers  (Chopped)
  • ¼ Cup Coriander (Chopped)
  • ¼ Teaspoon Dried Dill
  • ¼ Teaspoon Cumin
  • ¼ Teaspoon Salt

Directions

  1. Preheat your oven to 400℉ or 200℃.
  2. Cut the Avocado into ½ inch thick slices.
  3. Squeeze the lime on Avocado slices. This will preserve their green fresh color.
  4. Season with Salt and Pepper.
  5. Dip in Egg and coat in Breadcrumbs.
  6. Place them on a baking tray.
  7. Bake for 15 minutes. While waiting, start creating the dip.
  8. Put Mayo, Greek Yogurt, Chili Peppers, Coriander, Dried Dill, Cumin and Salt in a blender.
  9. Blend until smooth.
  10. Remove the Avocado Chips from the oven and serve with the dip!
