Zesty Homemade Protein Bars

Ingredients

Wet Ingredients

  • ½ Cup Orange Marmalade 100% Fruit (3.5 ounces / 100 grams)
  • ½ Cup of Peanut Butter – No added Sugar and Salt (3.5 ounces / 100 grams)
  • ⅓ Cup of Almond Milk – Unsweetened (2.7 ounces / 80 milliliters)
  • ¼ Cup of Organic Honey (2.5 ounces / 85 grams)
  • 1 Teaspoon Vanilla Extract

Dry Ingredients

  • 2.5 Cups of Whole Grain Oats (7 ounces / 200 grams)
  • ⅓ Cup of Almond Flakes (2 ounces / 56 grams)
  • 1 Cup of Protein Powder (5 ounces / 140 grams)
  • ¼ Cup Dried Cranberries (1.5 ounces / 43 grams)
  • ¼ Cup Ground Flaxseed (0.8 ounces / 25 grams)
  • ⅓ Cup of Diced Mixed Peel
  • 1 Teaspoon Cinnamon
  • ½ Cup Dark Chocolate – 70% Cocoa (3.5 ounces / 100 grams)

Directions

  1. Combine all the wet ingredients in a large bowl and microwave it for 60 seconds.
  2. Add all the dry ingredients (except the Chocolate) and mix well to form a thick and crunchy paste.
  3. Press it into a square pan lined with parchment paper to make a flat single layer.
  4. Heat up the Chocolate in the microwave.
  5. Coat the protein bars with the melted Chocolate.
  6. Put it in the freezer for 10 to 15 minutes.
  7. Remove from freezer, cut it into bars and enjoy your Zesty Protein snack!
