Stuffed Cherry Tomatoes

This easy and no cook appetizer has a total of only 15 calories. Besides being healthy and delicious, this recipe is a perfect side dish for your next party or family gathering. Your guests will love these colorful, pretty and bite-size stuffed baby Tomatoes!

Ingredients

  • 20 Pieces of Baby Tomatoes
  • 1 Whole Avocado
  • 1 Hard Boiled Egg
  • 1 Tablespoon Cottage Cheese
  • Salt and Pepper

Directions

  1. Make Tomato Cups first. Cut a thin slice off the top of each tomato scoop the seeds out of the baby tomatoes using a melon baller or small spoon, then set aside.
  2. Cut the avocado in half and remove the seed.
  3. Use a spoon and scoop out all the avocado flesh and put it in a mixing bowl.
  4. Slice the hard-boiled egg into small pieces and add it to the mixing bowl.
  5. Mash the egg and avocado together using a fork until the mixture is evenly combined.
  6. Add salt and pepper to taste.
  7. Fill the Tomatoes with the Egg and Avocado mixture.
