Ingredients
- 20 Pieces of Baby Tomatoes
- 1 Whole Avocado
- 1 Hard Boiled Egg
- 1 Tablespoon Cottage Cheese
- Salt and Pepper
Directions
- Make Tomato Cups first. Cut a thin slice off the top of each tomato scoop the seeds out of the baby tomatoes using a melon baller or small spoon, then set aside.
- Cut the avocado in half and remove the seed.
- Use a spoon and scoop out all the avocado flesh and put it in a mixing bowl.
- Slice the hard-boiled egg into small pieces and add it to the mixing bowl.
- Mash the egg and avocado together using a fork until the mixture is evenly combined.
- Add salt and pepper to taste.
- Fill the Tomatoes with the Egg and Avocado mixture.
