- 3 Tablespoons Frozen Dried Raspberries
- 2 Cups Coconut Flakes
- ½ Cup Coconut Cream
- ¼ Cup Coconut Oil
- ¼ Cup Maple Syrup
- ½ Teaspoon Vanilla Extract
- ¾ Cup 70% Dark Chocolate
Directions
- Crush the Frozen Dried Raspberries into tiny pieces using mortar and pestle.
- Mix crushed Frozen Dried Raspberries, Coconut Flakes, Coconut Cream, Coconut Oil, Maple Syrup, Vanilla Extract.
- Stir all the ingredients until well combined. The mixture should be thick and sticky.
- Grab a portion of the mixture and shape it into golf ball-sized balls using your hands.
- Place it on a tray lined with a baking paper, or if you don’t have it that’s fine.
- Chill in the freezer for 10 mins.
- Melt the Dark Chocolate in the microwave until it’s smooth and in liquefied form.
- Lay out a sheet of wax paper or parchment paper on a tray. You can use a grill rack if you have it.
- Remove the frozen coconut balls from the freezer. Roll each coconut ball in the melted chocolate until completely covered.
- Scoop the ball out using a fork (or a pair of a fork) and place it on the grill rack or your tray lined with parchment paper.
- Chill in the freezer again for 10 minutes.
- Using a fork, drizzle each ball with melted chocolate then top with few bits of crushed Frozen Dried Raspberries.
