Ingredients

  • 1 Sweet Potato (4.2 ounces / 120 grams)
  • Cheddar Cheese (1.8 ounces / 50 grams)
  • 1 Teaspoon Olive Oil
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Salt
  • Pinch of Black Pepper
  • 6 Large-sized Eggs

Directions

  1. Preheat your oven to 400℉ or 200℃.
  2. Generously spray or brush Olive oil on the muffin tin
  3. Peel the Sweet Potato. Use a cheese grater to grate the sweet potato into thin shreds.
  4. Place the grated sweet potato in a large mixing bowl.
  5. Add the grated Cheddar Cheese, Olive Oil, Garlic Powder, Salt, and Pepper. Mix well.
  6. Grab a portion of sweet potato mixture and press it lightly into the muffin tins.
  7. Bake for 15  to 18 minutes. Remove from the oven.
  8. Crack a large egg on top of each cup.
  9. Bake again for 8 to 10 minutes under 350℉ or 180℃.
  10. Add Pepper and Salt to taste. Serve and enjoy!
