Ingredients
- 1 Medium size Cucumber
- ½ Cup Low-Fat Cream Cheese (5.8 ounces / 110 grams)
- Smoked Salmon (5.8 ounces / 110 grams)
- 1 Tablespoon Dried Dill
- 1 Teaspoon Lemon Juice
- ¼ Teaspoon Black Pepper
Directions
- Make cucumber cups first. Slice into 1 inch thick. Using a melon baller or small spoon, scoop the seeds out of the cucumber slices leaving about ¼ inch at the bottom.
- In a medium-size bowl, mix Cream Cheese, Dried Dill, Lemon Juice, Black Pepper.
- Cut the Smoked Salmon into thin fillet strips.
- Fill the cucumber cups with the cream cheese mixture.
- Roll the strips of Smoked Salmon fillet and place it at the top of the cucumber cups.
- Garnish with herbs and serve!
