The ingredients for this Yummy Lemon and Coconut Protein bars are simple and the procedure is very easy to follow. There is no need for an oven or any special kitchen tools. These six simple ingredients are Vanilla Protein Powder, Coconut Flakes, Almond Milk, Organic Coconut Oil, Honey, Lemon and 70% Dark Chocolate.
In a large mixing bowl, combine all the ingredients except for the Dark Chocolate. It will be used in the last part as the decoration of the Protein Bars.
In creating the mixture, you may experience issues with excessive dryness or crumbling of these bars. This may be due to the thirstiness of the coconut flakes and/or the choice or protein powder used and may require an addition of extra liquid to compensate. You may adjust the measurement like an addition of Almond (or other) milk, added in 1 tbsp increments until the desired texture of a moist mixture is reached.
To get the authentic Lemon Zest taste, add the shredded Lemon Zest to the mixture. If you prefer a sweeter taste, cut down some zest.
Transfer the mixture to a square pan and press it flat to make a single flat layer using the back of the spoon. Drizzle melted chocolate on top. You can do this by filling a pastry or Ziploc bag halfway full with melted chocolate and snip off a tiny corner of the bag’s tip with scissors, or poke a hole with a sharp skewer then pour all over the cake. Then, slice into bite size square shape.
These Protein Bars are the best snacks you can bring to work or to the gym. Put the rest of the protein bars into a Ziploc bag and store it in the fridge. These can last for 4 to 5 days. This recipe is very easy to make and can definitely support your healthy diet!

- 3 Cups Vanilla Protein Powder (36 ounces / 1,020 grams)
- 1 Cup Coconut Flakes (12 ounces / 340 grams)
- ½ Cup Almond Milk ( 4 ounces / 118.5 milliliters)
- Organic Coconut Oil (1.7 ounces / 50 grams)
- Honey (1 ounce / 30 grams)
- Lemon Juice (Juice from one Lemon)
- Lemon Zest (Zest from one Lemon)
- 70% Dark Chocolate (0.5 ounces / 15 grams)
Directions
- Microwave the Dark Chocolate for 60 seconds or until it is completely melted.
- Mix the rest of the ingredients to form a thick and chewy paste.
- Press it into a square pan lined with a parchment paper to make a flat single layer.
- Drizzle the melted Chocolate
- Put it in the freezer for 30 minutes.
- Remove from freezer, cut it into bars and enjoy your chewy healthy snack!
