Healthy Frozen Yogurt Berry Cups

Ingredients

  • 1.5 Cups fresh chopped strawberries and/or raspberries
  • 1 Cup Granola (6 ounces / 170 grams)
  • ⅓ Cup Coconut Sugar (2 ounces / 56 grams)
  • ⅓ Cup of Coconut Oil – Melted (3 ounces / 94 milliliters)
  • 1.5 Cups Greek Yogurt (12.6 ounces / 375 milliliters)
  • ⅓ Cup of Honey (3 ounces / 94 milliliters)

Directions

  1. Prepare the crust. In a medium-sized bowl, mix together the granola, melted coconut oil, and sugar. Set aside.
  2. Put parchment cupcake liners on a muffin tray. Spoon a small amount of crust and press it to cover the bottom of each muffin cup.  Spoon 2 tablespoons into each muffin cup, covering the crust.
  3. On another bowl, mix greek yogurt and honey.  Spoon 2 tablespoons into each muffin cup, covering the crust.
  4. Top each with fresh chopped berries and put it in a freezer for two hours or more.
  5. Remove from parchment cupcake liners and enjoy your bite!
