Sweet Potato Chips & Dip

Ingredients

For Chips

  • 1 medium sized sweet potato (12 ounces or 340 grams)
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Chili Powder
  • ½ Teaspoon Salt
  • ¼ Teaspoon Cumin

For Dip

  • ½ Cup of Cucumber – Peeled & Chopped (3 ounces / 85 grams)
  • ⅓ Cup Low-fat Yogurt (3 ounces / 94 milliliters)
  • 1 Tablespoon Mint Leaves – Chopped
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Cumin
  • 2 or 3 Drops of Tobasco Sauce *Optional

Directions

  1. Preheat oven to 425°F or 220 ℃
  2. Prepare the chips. Cut the sweet potato into thin slices.
  3. In a medium-sized bowl,  combine olive oil, chili powder, salt, and cumin.
  4. Add sliced sweet potatoes to the mixture and toss gently to coat.
  5. On a non-stick baking tray, arrange coated sweet potatoes into a single layer.
  6. Put it into the oven for 20 minutes, 10 minutes on each side until golden and tender.
  7. In a small bowl, mix all dip ingredients until blended
  8. Serve the chips & dip and have fun!
