This breakfast is personally one of my all-time favorites and it only takes 5 or so minutes to make. It’s packed full of protein and healthy fats as you might expect but, the main thing for me here is the taste, it really is delicious! The sesame oil and chili flakes mixed with the avocado really jazz up this classic breakfast and will be sure to impress your partner or guesses.
Make sure you pick ripe avocado so it’s easy to mash.
I like to used seeded bagels when making this recipe but, it works with any toasted bread.
WATCH HOW WE MAKE THIS CHILI AVOCADO TOAST & POACHED EGG
Ingredients
- 1 Avocado
- ½ Teaspoon Chilli Flakes
- Black Pepper & Salt to taste
- 2 Slices Seeded Bagel
- Smoked Salmon (1 ounce or 30 grams)
- 1 Large Egg
Directions
- Cut the avocado in half and de-stone it. Slice the avocado flesh into cubes
- In a medium bowl, mash the Avocado flesh add Chilli Flakes, Black Pepper & Salt to taste.
- Slice the Bagel into half. Spread the Chilli Avocado mash.
- Top it with thinly sliced Salmon strip.
- Add the Poached Egg.
- Season with Black Pepper and serve.
Make a Perfect Poached Egg
- Make sure the egg is fresh.
- Crack the egg into a bowl or into a saucer.
- Bring a pan of water filled at least 5 cm deep into a swimmer. Let it simmer (medium heat) but not boiling. There should only be small bubbles rising.
- Stir the water to create a gentle whirlpool to help the egg white wrap around the yolk.
- Slowly tip the egg into the center.
- Cook for 3-4 minutes.
- Lift the egg out with a slotted spoon and drain it on kitchen paper. Remove any straggly bits of white.
