Tuna Stuffed Avocado

A quick and simple recipe that is packed with protein and flavor which is ideal as a post-work snack or just a delicious bite to eat. You can also experiment it with a variety of different vegetables and spices that suit your taste.

Ingredients

  • 2 Ripe Avocados
  • 1.5 Cans of Tuna – drained (5.8 ounces / 165 grams)
  • ⅓ Cup Cottage Cheese (2.6 ounces / 75 grams)
  • ½ Cup Red Peppers (2.5 ounces / 70 grams)
  • ½ Cup Coriander (2.5 ounces / 70 grams – chopped)
  • ½ Teaspoon Jalapeno – finely chopped
  • ½ Cup Lime Juice (4.8 ounces / 142 milliliters)

Directions

  1. Cut the Avocado in equal halves and remove the seed. Use a spoon and scoop out a portion of the Avocado flesh.
  2. Place the Avocado fresh into a mixing bowl and mash it with a fork.
  3. Add the drained Tuna, Cottage Cheese, Red Peppers, Coriander, Jalapeno, Lime juice and season with pepper.
  4. Stir the mixture well.
  5. Stuff the ‘Avocado bowls’ with the mixture and sprinkle with basil and pepper. Then, enjoy!
