Tuna Cucumber Cups

These cute little Tuna cucumber cups are super easy to make and are perfect as a healthy snack. You can use Mayo but, Low-Fat Cottage Cheese is a bit healthier and has more Protein. Tip: If you find that your Cucumber are too watery, here a trick to help; Once you scoop out the flesh, turn the cups upside down and place them on a sheet of kitchen towel for 20mins or so. This will allow for the excess water to drain out of the cucumber.

Ingredients

  • 1 whole medium size Cucumber
  • 1 can Tuna in water (6 ounces / 100 grams – drained)
  • ½ cup of Cottage Cheese (5 ounces / 115 grams)
  • ½ cup of Sweet Corn (5 ounces / 85 grams)
  • A pinch of Black Pepper

Directions

  1. Slice the Cucumber into 1 inch thick sections. Using a melon baller or small spoon, scoop the flesh out of the Cucumber sections leaving about ¼ inch at the bottom.
  2. Chop the scooped out flesh and place it into a bowl together with all the other ingredients, Tuna Cottage Cheese, Sweet Corn and season it with pepper. Stir the mixture well.
  3. Fill each cucumber cup with the Tuna mixture. Sprinkle with Black Pepper.
  4. Serve and Enjoy!
