Ingredients
- ½ Medium sized Cucumber
- Baby Tomatoes (3.5 ounces / 100 grams)
- Mozzarella Cheese (3.5 ounces / 100 grams)
- ½ Medium sized Red Onion
- 1 whole Avocado
- ½ Cup Coriander (4 ounces / 70 grams – chopped)
- 1 Whole Fresh Lime
- 1 Tablespoon Olive Oil
Directions
- Get a large mixing bowl with all the ingredients. Cut the cucumber into half-inch slices, then split into half circles.
- Cut the baby tomatoes in half and chop the onion.
- Slice the avocado in half, remove the seed, using a spoon scoop out the avocado from the peel and slice into one-inch cubes.
- Slice the Mozzarella cheese into half-inch cubes and mince the coriander
- Slice the lime in half, squeeze the juice into the bowl and pour olive oil.
- Add salt and pepper to taste then mix all ingredients well.
