Healthy Fish Pie

This simple fish pie recipe turned ordinary ingredients (that you may already have in your fridge) to a special tasty & healthy dish you can keep for weeks! Ingredients

  • 800g Mixed seafood
  • 1200g Potatoes
  • 400g Frozen Veg
  • 40g Butter
  • 50g Plain flour
  • 8 Spring Onions
  • 600ml Semi-skimmed milk
  • 1Tsp nutmeg
  • 1 Tsp Salt & Pepper
  • 50g Low-fat Cheese

Directions

  1. Add potatoes to boiling water, cook for 25 mins or until soft.
  2. In a large bowl, add the potatoes, milk, nutmeg, salt & pepper, then mash together. Set aside.
  3. In a saucepan melt the butter, then add the flour, spring onions and mixture together. Add the milk, reduce the heat to low and whisk until the sauce thickens (2-3mins).
  4. Next, add the seafood mixture, frozen vegetables, season with salt and pepper, stir and cook for another 2 mins.
  5. Spoon the mixture into 4 glass food containers, add a layer of mash potato, then finish with a sprinkle of cheese.
  6. Refrigerate or Freeze the glass container if you will not eat it yet. Store it in the fridge for up to 3 days or up to 30 days on the freezer.
  7. To serve, bake in a preheated oven at 190c 25mins. Enjoy!
