Ingredients
- 2 Medium sized Eggs
- Feta Cheese (1.8 ounces . 50 grams)
- Handful Spinach
- 1 piece Shallot
- 1 Garlic Clove
- 1 Teaspoon Olive Oil
- Black Pepper
Directions
- Heat 1 teaspoon of Olive oil in a non-stick pan over medium heat. Sauté shallots and garlic.
- Add Spinach leaves. Cook until wilted and remove from the pan.
- Beat 2 eggs in a mixing bowl and add black pepper to taste.
- Coat the pan with cooking spray and add the eggs.
- Cook the eggs for two minutes or until the underside is lightly brown.
- Arrange the sautéd spinach leaves and crumbled feta cheese on one side.
- Lift one side of the omelet with a spatula and fold it in half.
- Let the omelet cook for another two minutes each side or until the cheese to your desired consistency.
