Chili Con Turkey Cups

Making this flavorful meal is an easy and healthy way to prepare large meals for a party or if you need a meal you can take to work. It freezes well and it is even better the next day. We used Black beans and Turkey mince to level up the classic Chili Con Carne – another healthier option is to substitute chicken for the turkey.

Ingredients

  • Olive Oil
  • 1 Medium size Red OnionLean Mince Turkey (14 ounces / 400 grams)
  • 1 Can Chopped Tomato
  • Chili Con Carne Mix (2.8 ounces / 80 grams)
  • Sweet Corn (6 ounces / 170 grams)
  • 1 Can Organic Black Beans (Drained)
  • ½ Cup Water
  • Soft Tortilla Whole Wheat
  • Chopped Lettuce
  • Grated Mozzarella
  • Low-fat Sour Cream
  • Jalapenos

Directions

  1. In a large nonstick skillet over medium-high heat, cook Onions and lean mince Turkey.
  2. Stir until the onions are translucent and the meat turned brown.
  3. Add chopped Tomatoes, Chili Con Carne Mix, Sweet Corn, Organic Black Beans, and water.
  4. Stir and reduce the heat to low, cover and simmer for 20 minutes.
  5. Assemble Soft Tortilla Whole Wheat and chopped Lettuce.
  6. Pour the Chili Con Turkey.
  7. Add grated Mozzarella.
  8. Drizzle with low-fat Sour Cream
  9. Top with sliced Jalapenos and serve!
