Spider Cookies

Ingredients

CHOCOLATE SPIDER TRUFFLE

  • ⅓ Cup Applesauce (5 ounces / 85 grams)
  • 1 Teaspoon Instant Coffee
  • 1 Cup Cocoa Powder (4.6 ounces / 80 grams)
  • 3 Tablespoon Natural Honey
  • Candy Eyes Homemade or store-bought
  • ⅓ Cup Dark Chocolate (3 ounces / 50 grams)
  • Peanut Butter Cookie
WET INGREDIENTS
  • ¾ Cup Peanut Butter No added salt or sugar (5 ounces / 85 grams)
  • ⅓ Cup Unsalted Butter (6.5 ounces / 110 grams)
  • 1 Large Egg
  • 1 Teaspoon Vanilla Extract
  • ½ Cup Coconut Sugar (6.5 ounces / 110 grams)
DRY INGREDIENTS
  • 1 ¼ Cup Plain Flour (19 ounces / 325 grams)
  • ¾ Teaspoon Baking Powder
  • ¼ Teaspoon Baking Soda
  • 1 Teaspoon Salt

Directions

  1. Preheat the oven to 350 ℉ or 175 ℃. Line parchment paper on the baking tray and aside.
  2. In a small bowl, combine Applesauce and Coffee mixture, then set aside.
  3. In a medium bowl, mix Cocoa Powder, the Applesauce mixture and Honey then put it in the freezer for 10 minutes.
  4. Take it out from the freezer, scoop a portion of the chocolate mixture and shape them to round chocolate truffles using your hands, add the candy eyes, then set aside.
  5. In a large bowl, pour Peanut butter and Unsalted Butter, then beat it using a mixer until the wet mixture is soft and fluffy.
  6. Add Egg and Vanilla then beat again, add the Coconut Sugar then beat again until fluffy.
  7. In a separate bowl, mix all dry ingredients -flour, baking powder, baking soda, and salt together using a fork.
  8. Add the dry ingredients to the wet mixture and mix them well.
  9. Grab a portion and shape it into circle doughs. Then, put it on the baking tray.
  10. Bake the cookie doughs for 10 minutes. Remove from the oven. Quickly use a pestle to press the middle of each cookie to make holes for the chocolate truffles. Then place back in the oven and bake another 5 minutes or until golden and allow the cookies to cool until almost room temperature.
  11. Melt the dark chocolates and pour it into a zip bag. Zip lock the bag and cut off a small portion of one corner to create a hole. Squeeze and draw 8 spider legs on each cookie, starting from the truffle body down.
  12. Shoot the round chocolate truffles on the hole of the cookie and now you have Spider Cookies!

NOTES

STEPS HOW TO MAKE CANDY EYES
  1. Melt white Chocolate in microwave.
  2. Using a spoon, scoop a small amount of white chocolate, drop a little and make a shape of small round “white balls” into a tray lined with parchment paper.
  3. Place one small dark chocolate chip to the “white ball”.
  4. Put in the freezer for 10 minutes.
  5. Remove from the freezer and design your desserts!
